Monster Mash Cupcakes
Makes 24 cupcakes
Cupcake Ingredients
- 1 package Red Velvet or Devil’s Food cake mix
- Milk
- Eggs
- Oil
- 1 teaspoon vanilla or coconut extract
Cupcake Decorating Ingredients
- *1 container white vanilla rolled fondant
- Paste or gel food colorings
- Assorted purchased decorator frostings
- Assorted Halloween–colored sprinkles and candy decorations
Let’s start making Monster Cupcakes!
- Preheat oven according to cake mix package directions. Line 24 cupcake molds with paper liners. Set aside until ready to use.
- Prepare cake mix according to package directions substituting milk for water and adding either vanilla or coconut extract.
- Fill each prepared cupcake mold about ¾ full making sure each mold is filled evenly. Bake for the time suggested on directions for cupcakes. Remove from oven and cool on wire rack for 30 minutes prior to decorating.
Let’s decorate Monster Cupcakes!
- Dust your work area with 1-2 tablespoons of powdered sugar. Take a small amount (about 2 tablespoons) of rolled fondant from container and cover both sides with powdered sugar. For colored fondant, add a drop or two of food coloring and work into fondant with your fingers adding a bit more powdered sugar to keep fondant from getting sticky. Knead the fondant until the color is distributed through out.
- If using fondant to cover the top of the cupcake, flatten it with your hands and then gently roll into a small circle with a rolling pin. Using a 2.5–3 inch round cookie cutter, cut-out a circle of fondant. Place cut-out on top of the cupcake and press down lightly.
- To make faces, horns, and eyes, teeth etc. simply follow the steps for coloring and then form each shape with your fingers- it’s just like shaping Play dough!
- Apply fondant shapes and candies to “monster face. If the fondant is too dry to stick easily, simply take a drop of water on your finger and dampen the shaped piece to adhere to cupcake fondant base.
- Store decorated cupcakes in a covered container and serve within 24 hours.
* Rolled fondant may be purchased at cake decorating supplies store or craft stores.
